Sweet Potato Spice Cookies

 

Sweet potatoes are a fall favorite of mine, perfect for both sweet and savory recipes. This year, I wanted to create a sweet potato cookie recipe suitable for the Thanksgiving table – one that is also dairy-free, egg-free, and gluten-free.

These Sweet Potato Spice Cookies are a truly satisfying treat. Coconut oil and coconut sugar enhance the “sweet” of the sweet potato, while cinnamon, nutmeg, ginger, and clove provide the classic autumn spice flavors.

Sweet potatoes are a highly nutritious source of fiber and carbs, especially for those who have some trouble digesting other forms of carbohydrates. They have an exceptionally high concentration of vitamin A (beta-carotene), which many of you know supports eye health, but you may not realize is also key to a healthy immune system and helping your body fight off infections. They’re also a great source of vitamin C (boosts antioxidant levels and reduces inflammation) (2), manganese (support brain health) (3), vitamin B6 (supports production of serotonin and dopamine, plays a role in reducing Estrogen Dominance) (4), and potassium (helps maintain healthy blood pressure) (5).

Tip: Allow the flax egg mixture (1 tablespoon ground flaxseed and 3 tablespoon water) to sit for at least 5 minutes for best results.

Ingredients
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 cup cooked, peeled, mashed sweet potato
  • ¼ cup melted coconut oil
  • 1 cup gluten-free flour
  • ⅓ cup coconut sugar
  • ½ teaspoon aluminum free baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground clove
  • ½ teaspoon sea salt
How To Make
  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper. Stir together flaxseed and water in a medium mixing bowl. Add mashed sweet potato and coconut oil. Stir well.
  2. In a separate bowl, stir together flour, coconut sugar, baking powder, and spices. Stir dry ingredients into wet until thoroughly combined and moist.
  3. Scoop 2 tablespoon mounds of dough onto a cookie sheet 2 inches apart. Shape with a spatula into round cookies. Bake for 22-25 minutes. Cool cookies on a baking sheet at room temperature for 15 minutes before serving.

  2. Hi, I am planning on making these and would like to substitute the flaxseed. Would you suggest yogurt, applesauce or another ingredient and the appropriate ratio? Thanks for posting the recipe.

    • Hi Megan, we haven’t tried out any substitutions on this recipe. Since the flaxseed replaces eggs, I think something to help find the recipe would help it bind best. Let us know what you try & how it turns out! ~HB Support
