Sweet Potato Spice Cookies

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 cup cooked, peeled, mashed sweet potato
  • ¼ cup melted coconut oil
  • 1 cup gluten-free flour
  • ⅓ cup coconut sugar
  • ½ teaspoon aluminum free baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground clove
  • ½ teaspoon sea salt
How To Make
  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper. Stir together flaxseed and water in a medium mixing bowl. Add mashed sweet potato and coconut oil. Stir well.
  2. In a separate bowl, stir together flour, coconut sugar, baking powder, and spices. Stir dry ingredients into wet until thoroughly combined and moist.
  3. Scoop 2 tablespoon mounds of dough onto a cookie sheet 2 inches apart. Shape with a spatula into round cookies. Bake for 22-25 minutes. Cool cookies on a baking sheet at room temperature for 15 minutes before serving.
