Preheat the oven to 350ºF and line a baking sheet with parchment paper. Stir together flaxseed and water in a medium mixing bowl. Add mashed sweet potato and coconut oil. Stir well.
In a separate bowl, stir together flour, coconut sugar, baking powder, and spices. Stir dry ingredients into wet until thoroughly combined and moist.
Scoop 2 tablespoon mounds of dough onto a cookie sheet 2 inches apart. Shape with a spatula into round cookies. Bake for 22-25 minutes. Cool cookies on a baking sheet at room temperature for 15 minutes before serving.
