- 1 small apple, grated
- 1 cup zucchini, grated
- 1½ cups almond flour
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- 2-3 tablespoons almond butter (you can use any nut butter, really)
- 3 sprigs of fresh thyme, chopped
- 3 tablespoons freshly ground flax seeds
- ¾ cup water
- 1 tablespoon honey (raw, unheated) or maple syrup
- 2 tablespoons coconut oil
- Combine ground flaxseed and water in a small bowl. Set aside.
- Combine apples, zucchini, thyme, honey, and almond butter in one bowl.
- Combine flour, salt, and baking powder in another bowl.
- Combine all ingredients batter should be thick but well moistened. Add extra water if needed.
- Heat up the coconut oil and fry pancakes, about 5 minutes per side, without burning.
- Serve them with yogurt and fresh fruit or your favorite jam.
