This recipe is a little playful, as it uses the unusual combination of savory thyme and zucchini with sweet apple and honey. I hope you find them as complementary and joyful as I do. I dedicate this recipe  to all my clients who are staying off grains and/ or are following the Thyroid-GAPS diet (important thyroid nutrition foods) and who thought they would never have another pancake. There is life without grains! Try this and you will love it. These pancakes will also keep your blood levels even till mid-day, unlike pancakes made of grain flours. What a perfect way to start the weekend!

Almond Flour Zucchini Apple Pancakes

Ingredients
- 1 small zucchini, grated
- 1 small apple, grated
- 1 cup almond flour
- ½ teaspoon baking powder (skip if you are doing GAPS)
- ½ teaspoon sea salt
- 2-3 tablespoons almond butter (you can use any nut butter, really)
- 3 sprigs of fresh thyme, chopped
- 3 eggs
- 1 tablespoon honey (raw, unheated) or maple syrup (use honey if you are doing GAPS)
- 2 tablespoons of coconut oil
How To Make
- Combine apples, zucchini, thyme, honey and almond butter in one bowl
- Combine flour, salt and baking powder in another bowl
- Beat the eggs, just slightly
- Combine all ingredients
- Heat up the coconut oil and fry pancakes, about 5 minutes per side, without burning.
- Serve them with yoghurt and fresh fruit or your favorite jam.

I have been on gaps diet for 13 months and have drastically got worse and all my blood work is coming back hideous. My thyroid and all hormones are out of whack and I feel very bad.
I have heard that some people can get thyroid issues from the diet due to the lack of carbs. Any advice here?

You need carbs…. the right carbs…see your nutritionist. I eat lots of vegetables carbs. Had your problem early on in Gaps and learned what I needed.
