Almond Flour Zucchini Apple Pancakes

Ingredients
  • 1 small apple, grated
  • 1 cup zucchini, grated
  • 1½ cups almond flour
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2-3 tablespoons almond butter (you can use any nut butter, really)
  • 3 sprigs of fresh thyme, chopped
  • 3 tablespoons freshly ground flax seeds
  • ¾ cup water
  • 1 tablespoon honey (raw, unheated) or maple syrup
  • 2 tablespoons coconut oil
How To Make
  1. Combine ground flaxseed and water in a small bowl. Set aside.
  2. Combine apples, zucchini, thyme, honey, and almond butter in one bowl.
  3. Combine flour, salt, and baking powder in another bowl.
  4. Combine all ingredients batter should be thick but well moistened. Add extra water if needed.
  5. Heat up the coconut oil and fry pancakes, about 5 minutes per side, without burning.
  6. Serve them with yogurt and fresh fruit or your favorite jam.
