Almond Flour Zucchini Apple Pancakes

Serves: 6
  • 1 small zucchini, grated
  • 1 small apple, grated
  • 1 cup almond flour
  • ½ teaspoon baking powder (skip if you are doing GAPS)
  • ½ teaspoon sea salt
  • 2-3 tablespoons almond butter (you can use any nut butter, really)
  • 3 sprigs of fresh thyme, chopped
  • 3 eggs
  • 1 tablespoon honey (raw, unheated) or maple syrup (use honey if you are doing GAPS)
  • 2 tablespoons of coconut oil
How To Make
  1. Combine apples, zucchini, thyme, honey and almond butter in one bowl
  2. Combine flour, salt and baking powder in another bowl
  3. Beat the eggs, just slightly
  4. Combine all ingredients
  5. Heat up the coconut oil and fry pancakes, about 5 minutes per side, without burning.
  6. Serve them with yoghurt and fresh fruit or your favorite jam.
