Abundant Fresh Herb Frittata (Egg Free)

- ½ teaspoon olive oil for greasing
- 1 teaspoon nigella sativa seeds (optional)
- 1 ½ cups chickpea flour
- 1 teaspoon aluminum-free baking powder
- 1 teaspoon sea salt
- 2 cups filtered water
- 2 tablespoons olive oil
- 1 cup fresh chopped parsley
- 1 cup fresh chopped cilantro
- ½ cup fresh chopped dill
- 2 tbsp fresh chopped oregano, leaves only
- 2 tbsp fresh chopped thyme, leaves only
- ¼ teaspoon garlic powder
- Heat oven to 350ºF. Grease a 9-inch round pie pan with ½ teaspoon olive oil. Use a spice grinder or mortar and pestle to coarsely grind nigella seeds.
- In a large mixing bowl, whisk together chickpea flour, baking powder, salt, water and olive oil. Stir in freshly chopped herbs and garlic powder.
- Pour into pan and bake for 25-30 minutes. Allow to cool for 10 minutes at room temperature before slicing.
