Ingredients
  • 2 medium beets
  • 1 large avocado
  • ¼ cup blueberries
  • ¼ cup raspberries
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 2 cups unsweetened cacao powderOptional ingredients for garnish:
  • walnuts, finely chopped
  • coconut flakes
  • turmeric powder
  • additional cacao powder
How To Make
  1. Fill a medium saucepan with water and bring to boil. Add in the beets, cook until fork tender (about 40 minutes). Strain.
  2. Let beets cool, then peel off skin and cut into cubes.
  3. Using a food processor or blender, blend the beets, avocado, blueberries, raspberries, maple syrup, and vanilla extract until a smooth texture forms.
  4. Next, pour in the cacao powder ( ½ cup at a time) to evenly blend in with the fruit and veggie mixture. Add enough cacao powder so that the mixture starts to thicken.
  5. Place mixture into a bowl and refrigerate for 1-2 hours. Note: refrigerating overnight will make mixture harder and easier to roll into balls.
  6. Using a spoon, scoop out mixture into your hands and roll into a ball
  7. Next, roll ball into toppings of your choice - walnuts, coconut flakes, additional cacao powder or even turmeric. Enjoy!
