Paleovalley beef sticks are shelf-stable, and they don’t use anything problematic to preserve the meat. Instead, they rely on a natural fermentation with dextrose sourced from organic cassava. CARE

These beef sticks are shelf-stable at room temperature between 4 months and 6 months. They last longer in the fridge and freezer, where they can be kept frozen for up to a year. Just thaw at room temperature and enjoy.

THE SCIENCE

Paleovalley sources beef from cows that have been 100 percent grass-fed and grass-finished. That last part is an important distinction. Because “grass-fed” is an unregulated term, many brands call their beef grass-fed, even if their cows were supplemented with or fattened with grain before slaughter.

Grass-finished cows, on the other hand, suckle from their mothers for the first six or so months of their lives, grazing only on their natural diet of grass, plants, and greenery from then on. This is in stark contrast to the lives of grain-fed animals, who are often fattened quickly on an unnatural diet of grains, soy, and corn in concentrated, confined feeding operations.

Grass-feeding is better for the animal, more sustainable for the planet, but also better for us. Grass-fed beef is leaner, and its fat composition is healthier, with a higher Omega 3 fatty acid content. It’s also rich in antioxidants, like beta-carotene and vitamin E.
